Thanks for everybody's suggestions! However, in most of these books there are just
bits of other languages. I was thinking about books which use several languages
extensively, to such a degree that it would be impossible to read them without
understanding all the languages used.

Sapkowski's Reynevan trilogy has quite a bit of non-Polish text, but in various languages rather than one: Latin, German, Czech, Italian, French.
According to Polish reviews, his Żmija also has so much Russian that it's difficult to read. (I've read the beginning but it's obviously hard to judge)

Oh and Luntiala wrote an awesome SMS-story, mostly in Finnish but with some Swedish, English and one message in Spanish. I apparently missed a whole storyline in Swedish :/
